  • 2 tablespoons oil
  • 1 onion, chopped in bulk
  • 750 grams of carrots, cut in bulk
  • 2 stalks of celery, cut in bulk
  • 1 bay leaf
  • 1 piece of ginger / about 5 centimeters /, finely chopped
  • 2 teaspoons turmeric
  • 2 cloves garlic, finely chopped
  • 4 teaspoons vegetable broth
To garnish the carrot soup:
  • 1 handful of fresh parsley leaves, cut in bulk
  • 4 green onion stalks, finely chopped
  • 4 tablespoons sesame oil
  • 2 tablespoons lemon juice

How to cook carrot cream soup:

  • Heat the oil in a large saucepan over medium heat.
  • Add onions, carrots, celery and bay leaf and stew for about 10 minutes, stirring often.
  • Add the ginger, turmeric and garlic, stir and cook for another 5 minutes.
  • Add the broth and after the soup boils, reduce the heat and simmer for 15 minutes.
  • Remove the bay leaf and puree until smooth.
  • In a small bowl, combine parsley, green onions, sesame oil and lemon juice. Stir.
  • Pour the carrot cream soup into bowls, garnish and serve.
