The recipe, which you will see below, was provided by Nora Vrabcheva - a follower of yoga, Ayurveda and Indian cuisine.

And here is what she writes to us:

  • 3 cups grated carrots
  • 3.5 cups of fresh milk
  • 3 tablespoons ghee or butter
  • 10 tablespoons sugar
  • A handful of raisins, almonds, cashews or other nuts as desired
  • A few cardamom beans, if you have powdered, no more than 1 teaspoon

Melt half the butter in a non-stick pan, add the carrots and stew them for 5-7 minutes, tightly covered with a lid. Add the milk, sugar and cardamom, which you can crush beforehand if it is in pods. Boil for 30 minutes, stirring occasionally. Add the raisins, nuts, remaining oil and a little more cardamom. We mix well and we can shape it in a tray or in bowls, cups ... I leave the presentation to your imagination, and the enjoyment of the aromas and tastes of the consumers.
