How To Cook Carrot Muffins With Walnuts, Raisins And Cinnamon - Recipe

Required products :

400 grams of carrots
2 eggs
130 grams of flour
100 grams of butter
1 teaspoon oil
120 grams of granulated sugar
1 tablespoon powdered sugar
1/2 teaspoon baking soda
pinch of cinnamon
50 grams of walnuts
50 grams of raisins
salt to taste


Method of preparation :

Pour boiling water over the raisins and let them stand for 10 minutes to soften. Dry the walnuts in a dry pan, then crush coarsely. Grate the carrots using a coarse grater.
Mix the eggs with the butter (not cold) and sugar, beat them together. Gradually add the flour sifted with soda, salt and cinnamon, stirring constantly. Pour the carrots, raisins, walnuts into the dough and mix.
Grease silicone muffin tins with oil or use paper ones. Distribute the resulting mixture in them, filling 2/3 of the volume of each.
Bake in a preheated 200 degree oven for about 20-30 minutes. The cupcakes will darken, but will remain moist inside due to the presence of carrots in the dough.
Remove from oven, allow to cool completely and sprinkle with powdered sugar. You can decorate with walnuts.
