How To Cook Carrot Pancakes With Cream Cheese, Walnuts And Honey - Recipe

Required products :

  • 1 1/2 teaspoons flour
  • 4 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/2 teaspoons buttermilk
  • 3 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon grated carrots, dried with kitchen paper
  • 1 teaspoon orange peel, finely grated
  • 1/4 tea toasted walnuts, finely chopped

For garnish :

  • 230 grams of cream cheese
  • 1/2 teaspoon liquid honey
  • 4 tablespoons butter

For sprinkling :

  • toasted walnuts
  • honey

Method of preparation :

  • In a large bowl, mix the flour, sugar, baking powder, baking soda and salt.
  • In another bowl, beat the eggs and add the buttermilk, melted butter and vanilla extract.
  • Add the carrots, walnuts and orange peel and mix well.
  • Add the carrot mixture to the dry ingredients and stir with a wooden spoon.
  • Cover the bowl and cool the dough for a minimum of 30 minutes, but no more than 3 hours.
  • Heat a large non-stick skillet over medium heat.
  • Grease with oil and pour 1/2 tea cup of the mixture, shaping the pancake with a spoon.
  • Bake for about 2 minutes, gently turn and bake for another 1 minute until golden brown. Repeat with the remaining dough.
  • In a medium bowl, whisk the cream cheese with the honey and butter for 2 minutes.
  • Serve the carrot pancakes warm, garnished with honey cream cheese, honey and walnuts.
