Required products :

500 grams of carrots
400 grams of boiled or canned chickpeas
200 grams of feta cheese
100 grams of pistachios
2 full handfuls of small spinach leaves
5 sprigs of mint
2 teaspoons ground cumin
juice of 1/2 lemon
1 tablespoon light liquid honey
olive oil

 

Method of preparation :

Turn on the oven to preheat to 200 degrees.

Peel the carrots, cut them into pieces 5 cm long, then each of them - into 4-6 pieces. Put them in a pan, sprinkle with cumin and pour 1 tablespoon of olive oil. Season with salt and ground black pepper to taste, stir and bake until done (about 30-40 minutes).
Take them out into a bowl.

Drain the chickpeas from the liquid with a colander, rinse the beans and add them to the carrots.

Mix lemon juice and honey, pour 1 tablespoon of olive oil. Pour this combination over the salad while the carrots are still hot. Allow them to cool, while cutting the spinach, mint and nuts. Pour them into the bowl with the other products and finally put the mashed cheese.
