How To Cook Carrot Salad With Chickpeas And Tahini Dressing - Recipe

Required products :

For chickpeas :

  • 1 1/2 teaspoons canned chickpeas, rinsed, drained and dried
  • 1 tablespoon olive oil
  • 1/4 teaspoon cumin, ground
  • 1/8 teaspoon cinnamon powder
  • 1/8 teaspoon hot red pepper

For the dressing :

  • 1 clove of garlic, pressed
  • 1/4 cup tahini
  • 1/4 tea cup lemon juice, freshly squeezed
  • 2 tablespoons olive oil
  • 1 teaspoon liquid honey
  • 1/8 teaspoon hot red pepper
  • 1/2 teaspoon salt
  • 2 tablespoons fresh parsley leaves, finely chopped
  • water for dilution, if necessary

For the salad :

  • 3 tea cups grated carrots
  • 1/2 small red onion, finely chopped
  • 1/2 cup raisins
  • 1 teaspoon fresh parsley leaves, cut in bulk
  • salt and pepper to taste

Method of preparation :

  • Preheat oven to 220 degrees and cover pan with parchment paper.
  • In a bowl, mix the chickpeas with the olive oil and spices and mix well to taste evenly.
  • Spread in the pan and bake for about 15-20 minutes, stirring occasionally
  • Remove from the oven and set aside to cool.
  • Mix the dressing ingredients in a glass jar, close tightly and shake vigorously. If the mixture seems too thick, add a little water and shake again.
  • In a large bowl, mix the grated carrots, onions, raisins and parsley.
  • Sprinkle with dressing and mix well. Season with salt and pepper to taste.
  • Divide the salad into bowls and serve.
