Necessary products

  • 150 grams of butter
  • 150 grams of onion, finely chopped
  • 2 minced garlic cloves
  • 500 grams of carrots, peeled and cut into small pieces
  • 1 tablespoon cumin
  • ½ tablespoon spicy curry
  • 300 milliliters of chicken or vegetable broth
  • 1 tablespoon fresh coriander

 

Method of preparation

Put the butter in a saucepan and melt it over medium-high heat. Pour onions, garlic and carrots. Add a pinch of salt. Fry the vegetables for 5-6 minutes until soft. Add the cumin and curry, stir and cook for another 2-3 minutes.

Pour the broth into the pan. Add 500 milliliters of water. Wait for it to boil, then reduce the temperature. Let the soup simmer for about 30 minutes.

After removing from the heat, beat the soup with a blender until smooth and thick. You can also strain it through a large sieve if you want it to be finer.

Serve the soup while warm. Sprinkle with fresh coriander. Enjoy your meal!
