Required products :

  • 8 carrots
  • 1 tablespoon olive oil
  • 1 onion
  • 50 grams of butter
  • 1 liter of broth (vegetable)
  • 2 cloves garlic
  • 10 grains of black pepper
  • thyme stalk
  • 1 tablespoon vinegar (apple)
  • 50 grams of croutons
  • sol

 

Method of preparation :

Wash the carrots, peel them and cut into small cubes. Add salt, olive oil and stir.

Preheat oven to 200 degrees and bake for about 15-20 minutes.

Cut the onion into semicircles and fry in butter until lightly browned. Then pour the carrots over them, pour the hot broth and let the mixture boil.

Peel the garlic cloves and together with the black peppercorns and thyme stalks put in gauze, which you tie to get a "bag".

Put it in the boiling liquid for 20 minutes, then remove.

Puree the soup using a blender, season with salt and vinegar and when cool enough, refrigerate for an hour to cool.

Serve with croutons.
