Heat olive oil and add the butter to it. Add the chopped onion and fry until soft. Followed by carrots and celery, fry them for 1-2 minutes. Pour the cream and water. Cook until bubbles begin to form.
Season with salt and pepper. Cover the soup and simmer for 15 minutes.
Add the garlic and mustard, cover again and continue to simmer for another 10 minutes.
Transfer the soup to a bowl and sprinkle with mint leaves. Blend to obtain a smoothie consistency.
Serve with croutons.
