Required products :

500 grams of peeled carrots
6 tablespoons water
180 grams of starch
150 grams of sugar
150 grams of walnuts
100 grams of coconut shavings
peel of 1/2 lemon

Method of preparation :

Grate the peeled carrots with a fine grater.

Put them in a suitable container and pour 3 tablespoons of water. Pour all the sugar and stir. Put the pan on low heat. The carrots will release their juice. Stir them periodically so that they do not burn.

Cut the walnuts into large pieces.

After 15 minutes on the stove, the carrots will change color, it will become slightly yellow. At this point, add the walnuts, grated lemon peel and stir.

Add the remaining 3 tablespoons of water (necessarily cold) to the starch and mix thoroughly. A cream-like consistency should be obtained. Use more water if necessary.

Add to the pot with the carrots, stir. When the mixture begins to separate from the walls of the vessel, turn off the stove.

Cover the bottom of a form of your choice with parchment and pour the carrot mixture. Distribute it evenly, with a layer thickness of about 2-3 centimeters.

When cool, wrap the container with plastic wrap, which you pierce in several places with a toothpick or fork to allow air to enter.
Refrigerate for 6-8 hours.
When you remove the cooled mixture, carefully transfer it to a board or parchment and cut into cubes measuring 2 x 2 centimeters.

All you have to do is roll the Turkish delight in the coconut shavings and serve.

Enjoy your meal!
