Required products :

  • 500 grams of sweet potatoes
  • 1 teaspoon olive oil
  • 1 small onion red onion, cut into crescents
  • 2 stalks of celery, finely chopped
  • 2 cloves garlic, crushed
  • 1 tablespoon fresh oregano, chopped
  • 400 grams of canned beans
  • 400 grams of cherry tomatoes
  • 100 grams of kale, finely chopped (you can use spinach, nettle, dock)
  • 4 eggs

Method of preparation :

Preheat oven to 200 degrees and grease a rectangular pan with olive oil.

Cut the sweet potatoes into 5 mm thick slices. Arrange them on the bottom and walls of the tray (the ones you put on the side, you can cut so that they do not go out of shape).

Season them and grease with olive oil. Bake for 25 minutes.

Meanwhile, in the remaining olive oil, fry the onion and celery for 6-7 minutes until softened. Add the garlic and oregano, after a minute add the beans and tomatoes. Cook for 5 minutes until the sauce starts to thicken and the tomatoes cook.

Add the kale leaves and, when melted, season.

Pour the mixture over the potatoes in the pan and with a spoon make 4 holes in the mixture, where you beat the eggs. Bake for 15 minutes until done.

Serve with arugula and oregano leaves.
