Autumn is the time when we can enjoy cauliflower. There are more and more recipes that include it, and it is not consumed only on pickles. Required products :

  • 450 grams of basmati rice
  • 3 onions
  • 6 cloves garlic
  • 5 cm ginger root
  • olive oil
  • 1 tablespoon curry powder
  • 600 grams of tomatoes
  • 1 green hot pepper
  • 1 tablespoon tomato paste
  • 1 large head of cauliflower
  • 200 grams of cheese
  • 250 grams of spinach
  • 30 grams of coriander
  • 100 grams of yogurt
  • turmeric for sprinkling

Method of preparation :

Turn the oven to 180 degrees.

Boil the rice in salted boiling water, and when it is ready, drain if there is excess water and leave to cool.

Peel an onion and cut it into thin crescents. Finely chop the garlic and ginger.

Fry them in a large pan with 1 tablespoon of olive oil, seasoned with curry powder. Fry for 15 minutes, stirring often.

Cut the tomatoes and hot peppers and put them in the pan. Stir to crush the tomatoes, add the puree and cook for 5 minutes.

Add the cauliflower, cut into roses, along with the most fragile cauliflower petals. Add the cheese, spinach and 100 ml. water. Mix everything well and wait for it to boil. Cover with a lid and cook on low heat for 15 minutes, stirring occasionally.

Meanwhile, finely chop the stems and leaves of coriander.

Remove the vegetables from the heat, add the yoghurt and season to taste.

Stir and remove half of the vegetables from the pan. Sprinkle the rest of the pan with coriander, put the cooled 1/2 of the rice, sprinkle with turmeric. Cover with the separated greens, followed by rice and turmeric.

Drizzle with olive oil and bake for 25 minutes to make the rice crispy.
