Method of preparation :
Start cooking onions. Put it in a pan and season with thyme and a pinch of salt. Pour olive oil and fry for 25 minutes until golden (if the onion starts to burn, add a little water).
Prepare the broth by chopping all the vegetables, fill them with 1.25 liters of water and cook for 20 minutes. Remove from the heat and strain.
Prepare the mushrooms as well: heat a pan with olive oil and add the garlic, after 30 seconds add the mushrooms and cook until they turn brown and the water evaporates, about 15 minutes.
Turn on the oven to preheat to 190 degrees.
Peel a celery root and cut it into thin slices.
Cut the garlic cloves in half and rub a rectangular pan with it. Put 1/3 of the celery in the bowl, arranging the slices tightly. Spread half the mushrooms and half the onions on top. Then again celery, mushrooms and onions, finish with the remaining celery and pour 500 milliliters of broth.
Cover with foil and bake for 30 minutes. Then remove the foil and sprinkle with chopped chestnuts, bake for another 25 minutes, until golden brown.
