How To Cook Casserole With Parsnips, Potatoes And Eggs - Recipe

Required products :

  • 4 parsnips, peeled
  • 1 large potato, peeled
  • 2 tablespoons olive oil + 2 teaspoons to spread
  • 50 grams of Pecorino cheese
  • 1 lemon - grated rind and 2 teaspoons of juice
  • 6 eggs
  • 60 grams of spinach

Method of preparation :

Boil the potatoes and parsnips for 10 minutes. Drain and allow to cool.

Turn on the oven to heat to 200 degrees. Grate the potatoes and parsnips, put in a bowl and pour 1 tablespoon of olive oil, add the cheese and lemon zest, season to taste with salt and pepper.

Line a large baking tray with parchment paper and grease with olive oil.

Pour the vegetables into the pan and spread to get a thin layer. Bake for 35-40 minutes until crispy.

Meanwhile, mix the lemon juice with 1 tablespoon of olive oil and a pinch of salt.

When the vegetables become crispy, beat the eggs on them and bake for another 8-10 minutes, until the desired hardness of the yolk.

Mix the spinach with the lemon dressing.

Serve the fried parsnips with potatoes along with the spinach salad.
