Preheat the oven to 180 degrees.
Grease a medium ceramic pan with grease.
Heat the butter in a saucepan, after it melts add the flour and stir for 2 minutes until it starts to form bubbles and the consistency is like a thick paste. Remove from the heat and carefully pour in the milk, stirring constantly. Return the pan to the heat and heat until the sauce thickens (do not stop stirring to avoid burning). Add 1 1/2 teaspoons of yellow cheese to the sauce and combine.
Arrange 1/3 of the potatoes on the bottom of the pan and season with salt and freshly ground black pepper. Spread with 1/3 of the sauce, repeat 2 more times. Sprinkle with cheese at the end and bake for 1 hour until the potatoes are soft and golden. If the dish starts to burn too early, cover with foil and bake until the vegetables are ready.
