How To Cook Casserole With Pumpkin, Nuts And Mushrooms - Recipe

Required products :

  • 4 tablespoons olive oil
  • 1 onion, chopped
  • 1 clove of garlic, crushed
  • 800 grams of pumpkin, cut into small cubes
  • 250 grams of mushrooms
  • 2 tablespoons finely chopped rosemary or thyme
  • 180 grams of cooked chestnuts, chopped
  • 250 milliliters of cream
  • 3 tablespoons parsley
  • 25 grams of crushed pistachios
  • 25 grams of pine nuts
  • 25 grams of sunflower

Method of preparation :

Preheat oven to 200 degrees.

Pour olive oil into a pan and fry the onion, garlic and pumpkin for 10 minutes, stirring occasionally, until the vegetables are soft. Add the mushrooms and rosemary (thyme) and continue cooking for another 3-4 minutes until all the products are completely ready. Finally add the chestnuts.

Pour the cream and when it boils, remove the pan from the heat. Season to taste and stir again.

Pour into a pan (capacity about 2 liters), sprinkle with parsley and stir.

Grind the nuts and seeds, but a little fine, so that you feel larger pieces.

Sprinkle the vegetables with them, trying to distribute them evenly.

Bake for about 15-20 minutes.

Serve with bread and salad if desired.
