How To Cook Casserole With Zucchini, Almonds And Cheese - Recipe

Required products :

  • 1 tablespoon olive oil
  • 1 teaspoon butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, chopped
  • 2 yellow and 2 green zucchini - one cut into cubes and the other into strips (like spaghetti)
  • 1/3 tea cup chopped raw almonds
  • 1 cup grated yellow cheese (cheddar, Bulgarian yellow cheese or Monterey Jack)
  • 1/2 teaspoon cream
  • 2 eggs
  • 1/3 tea cup roasted almonds, coarsely crushed

Method of preparation :

Put olive oil and butter in a pan and fry onions and garlic in it until soft - about 3-4 minutes. Add the zucchini, season. Cover the pan with a lid and cook for about 5 minutes until the vegetables are soft. Transfer to a bowl.

Mix raw almonds with 1/2 cup yellow cheese and stir in zucchini.

Combine the cream and eggs and pour over the vegetables, stirring again.

Transfer all products to a ceramic pan, sprinkle on top with the remaining yellow cheese and roasted almonds.

Bake the dish for 25-30 minutes at 200 degrees until it acquires a crispy crust and the cheese forms bubbles.
