Stew the onion in the oil for 5 minutes until soft. Add the cauliflower potatoes (peeled and sliced), broth, milk and season. Cook for 30 minutes until the vegetables are completely soft.
Blend the soup with a metal blender.
Serve the cream soup with a few cubes of yellow cheddar, stir to melt the cheese and eat with toast.
