Necessary products:

 

  • 1/2 head cauliflower
  • 80 grams of raw Indian cashews
  • 2 teaspoons brewer's yeast
  • 50 grams of chickpea flour
  • 5 grams of nutmeg
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 cup rice milk
  • 2 teaspoons agar-agar
  • 4 tablespoons water
  • olive oil for frying

 

Method of preparation:

 

Boil the cauliflower and soak the nuts in water for 3 hours. Put them in a blender and add salt, nutmeg and black pepper and brewer's yeast.

Beat the mixture and add the rice milk little by little. Dissolve the gelling agent in the water, stir and combine with the cauliflower mixture.

Stir, form croquettes, roll them in chickpea flour and fry in hot olive oil. Drain, arrange on a plate and serve.
