How To Cook Cauliflower Lasagna With Chicken - Recipe

Required products :

  • 1 tablespoon olive oil
  • 1 stalk of leek, finely chopped
  • 500 grams of minced chicken
  • 200 grams of mushrooms
  • 200 grams of spinach, blanched, drained and chopped
  • 250 grams of cream cheese
  • 1 teaspoon dried tarragon
  • 125 milliliters of tomato sauce
  • 100 grams of grated ripe mozzarella

for cauliflower peel:

  • 1.1 kilograms of cauliflower, chopped in bulk
  • 40 grams of grated Parmesan cheese
  • 2 eggs

Method of preparation :

Grind the cauliflower in two batches in a food processor until crumbly. Put in a bowl and heat in the microwave for 8-10 minutes until soft. Drain it through a kitchen towel. Mix it with eggs and parmesan and season with salt and pepper.

Preheat the oven to 180 degrees and line 2 baking trays with parchment paper. Divide the cauliflower between them and press it well, trying to form rectangles measuring 22 by 30 centimeters.

Bake for 15-20 minutes to dry. Allow to cool, then cut 10 cm crusts (you should get a total of 6 pieces).

While the cauliflower is baking, fry the leeks for 4-5 minutes. Add the chicken and shred it during frying, about 5 minutes. Add the mushrooms, stir often and fry for another 5 minutes until golden. Finally add the spinach and stir. Next is the cream cheese, after it has melted, add the tarragon and salt.

Grease a rectangular pan with grease of your choice and add half of the tomato paste. Put 2 leaves of cauliflower, put half of the chicken mixture on top and sprinkle with 1/3 cup of mozzarella. You should put cauliflower and the rest of the chicken again. Finish with the last 2 lasagna leaves and pour over the remaining tomato sauce and mozzarella.

Bake for 30 minutes, until the cauliflower lasagna has a golden crust. Wait 7-10 minutes before slicing and serving to cool.
