Required products :

  • 20 grams of butter
  • 70 grams of flour
  • 300 grams of fresh milk
  • 1/4 teaspoon nutmeg
  • 100 grams of grated cauliflower
  • 50 grams of parmesan
  • 100 milliliters of cream
  • 2 eggs, broken

Method of preparation :

Melt the butter in a saucepan. Add 20 grams of flour and stir for 1-2 minutes until a paste is obtained.

Carefully add 150 milliliters of milk, stirring constantly, until the mixture is smooth and creamy. Simmer for 2 minutes. Then add the nutmeg and season with salt and pepper to taste.

Cover and allow to cool completely, then distribute the sauce between 4 large ice cubes and freeze for 4 hours or overnight.

Preheat the oven to 180 degrees and grease with 4 cups of caramel cream.

Mix the grated cauliflower with the remaining 150 milliliters of milk and 50 grams of flour. Add the grated Parmesan cheese, cream and eggs. Forge.

Distribute the mixture between the 4 molds and press in the middle of each frozen cube of sauce, so deep that it is covered.

Bake for 25 minutes until golden. Allow the cauliflower cupcakes to cool for 2-3 minutes before peeling them by running a knife along the edge of the cups. Turn into a plate and serve the dish warm.
