Required products :

  • 1 cauliflower (about 800 grams), chopped
  • 1 tablespoon olive oil
  • 1 small red onion, finely chopped
  • 2 cloves garlic, chopped
  • 1/2 teaspoon cumin seeds, crushed
  • 200 grams of cheese (feta or white brine)
  • 3 broken eggs
  • 2 tablespoons chopped coriander
  • 8 pastry crusts
  • 75 grams of melted butter

Method of preparation :

Grind the cauliflower.

Put olive oil in a pan and fry onions in it for about 5 minutes, add garlic and cumin. After a minute, add the cauliflower and cook for 5 minutes, stirring occasionally. Transfer to a bowl and cool, add the cheese, eggs and coriander, salt.

Turn on the oven to preheat to 220 degrees.

Grease a medium square pan with oil.

Take a peel, grease it with oil and put the cauliflower. Roll up and place in the pan. Finish in the same way with the other crusts. You can shape the pie into a snail or, if the tray is rectangular, place the rolls next to each other.

Grease the pie with the remaining butter and bake for 30 minutes, until done.

When it becomes golden and crispy, take it out of the oven.

If desired, you can serve it immediately to enjoy the crispy crust, or sprinkle with water and cover with a towel to soften.
