Required products :

  • 1 head of cauliflower, cut into roses
  • 1 teaspoon chicken broth
  • 1 teaspoon salt
  • 3 tablespoons unsalted butter
  • 1 teaspoon fresh thyme, finely chopped
  • freshly ground black pepper to taste

Method of preparation :

 

  • Heat the chicken broth with the salt in a large saucepan over high heat.
  • Once the mixture boils, add the cauliflower and reduce the heat.
  • Cover with a lid and cook on low heat for 20 minutes or until the cauliflower is soft.
  • Transfer to a blender using a slotted spoon.
  • Add 3 tablespoons of chicken broth and butter. Mash to a smooth consistency.
  • Try and season with salt and freshly ground black pepper to taste.
  • Add the thyme and mash briefly.
  • Serve the cauliflower puree in bowls, garnished with fresh thyme leaves.
