How To Cook Cauliflower Rice With Chicken, Chickpeas And Turmeric - Recipe

Required products :

  • 1 cauliflower (about 500 grams)
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds, crushed
  • 1 clove of garlic, finely chopped
  • 1 teaspoon garam masala
  • 1 teaspoon grated ginger
  • 1/2 teaspoon salt
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 350 grams of chicken white meat, cut into chunks
  • 1 cup grated carrots
  • 1 cup peas (frozen or fresh)
  • 1/2 cup roasted chickpeas (or crushed walnuts)

Method of preparation :

Chop the cauliflower into small pieces and grind it in portions in a food processor to get crumbs (you can also grate it).

Put 1 tablespoon of the fat in a wok and when it heats up, fry the cumin seeds for 10 seconds. Add all the spices. Put the chicken and stir. When the meat turns white, transfer it to a plate.

Add the remaining fat to the wok and fry the onions, carrots, peas for 2 minutes. Add the cauliflower rice and cook for 4-5 minutes until soft. Return the meat to the vegetables, stir and serve.

Add chickpeas or nuts to each portion, finish with fresh coriander or parsley.
