Learn how to cook "Cauliflower salad with olives and sun-dried tomatoes". Delicious recipe.
Required products :
3 tea cups grated cauliflower
1/2 cup finely chopped carrots
1/3 tea cup chopped red sweet pepper
4 tablespoons dried crushed basil
4 tablespoons chopped parsley
3 tablespoons chopped sun-dried tomatoes (you can also use fresh)
2 tablespoons finely chopped olives
3 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoon capers (optional)
1/2 teaspoon salt
1/8 teaspoon hot pepper
Method of preparation :
Grate the cauliflower on a coarse grater. It turns out interesting, like couscous or rice.
Cut the pepper and carrot into small cubes.
Mix them in a suitable bowl and add the basil and parsley.
Sprinkle them with a little olive oil and add the chopped tomatoes and olives.
It's time for the lemon juice, you can also add a little grated citrus peel for flavor.
If you are going to use capers, now is the time to add them to the mixture.
It remains to season the salad with salt and pepper, pour the remaining olive oil and stir.
