Required products :

  • 1 egg
  • 2 tablespoons ground flaxseed
  • 2 cups cauliflower rice
  • 225 grams of almond flour
  • 1 and 1/2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 and 1/2 teaspoons beehive salt
  • 2 teaspoons olive oil + more for greasing
  • sandwich garnish (optional)

Method of preparation :

Preheat oven to 180 degrees.

Beat the eggs with the ground flaxseed in a bowl and set aside for at least 5 minutes.

Heat the cauliflower rice in the microwave for 3-4 minutes until soft. Set aside to cool, then wrap in a kitchen towel and squeeze out excess liquid.

Blend the cauliflower rice, almond flour, egg mixture, garlic powder, onion powder and salt until thick.

Heat 1 teaspoon of olive oil in a square pan over medium heat. Pour the cauliflower mixture with a damp spatula and distribute evenly in the shape of a square. Bake in the oven for 12 minutes or until lightly browned. Remove the cauliflower slice and smear it with olive oil. Reduce the oven temperature and bake again for 3-4 minutes. Repeat with the remaining mixture.

Use the baked slices instead of bread to make sandwiches. Garnish with mashed avocado and paprika, arugula and fried egg, pesto and roasted mushrooms or pate and sliced ​​tomatoes.
