Necessary products:
- 2 cups boiled cauliflower
- 2/3 to 3/4 cup chicken broth
- garlic powder
- ground black pepper
- 30 grams of low-fat cream cheese
- 1/3 cup low-fat yogurt
- 2 slices of bacon, crispy baked and crushed
- 1 teaspoon fresh parsley, chopped
- 1/4 teaspoon lemon zest, grated
- 1 tablespoon yogurt
Method of preparation:
Blend the cauliflower and broth until smooth, season with garlic powder and black pepper.
Transfer to a small saucepan. Bring to a boil over medium heat, stirring occasionally.
Add the cream cheese and, if necessary, more chicken broth to reach the desired consistency.
Serve the soup. Optionally, garnish with crispy bacon, finely chopped parsley, yogurt and lemon zest.
