How To Cook Cauliflower, Tomato And Ginger Soup - Recipe

Required products :

  • 2 potatoes, peeled and cut into cubes
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 1/2 head of cauliflower, cut into roses
  • 3 cloves garlic, chopped
  • 1/2 red hot pepper, finely chopped
  • 5 cm ginger root
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 tablespoon tomato paste
  • 400 grams of canned tomatoes
  • 1 cube of vegetable broth dissolved in 500 milliliters of hot water
  • 100 grams of yogurt
  • 1 teaspoon black cumin for sprinkling (optional)

Method of preparation :

Bring water to a boil in a saucepan, then add the potatoes. Boil them for 8 minutes until soft. Drain and set aside.

Meanwhile, heat the olive oil. Fry the onion for 3-4 minutes until soft. Add the cauliflower, garlic, hot pepper and ginger. Cook for 1 minute and add ground turmeric and cumin. Fry for 2 minutes and cover with a lid, reduce the heat. Stew for 5-6 minutes until the vegetables are soft.

Remove the lid and add the tomato puree and canned tomatoes. Boil the liquid for 6-8 minutes until it starts to thicken. Pour the broth and half of the boiled potatoes. Remove from the heat and blend. Stir the yoghurt into the soup and return to the stove at low temperature. Season with salt and pepper.

Meanwhile, fry the remaining potatoes for 4-6 minutes until golden and browned. Transfer to drain on paper.

When serving, in each portion put the french fries and sprinkle with cumin seeds and coriander leaves.
