Cauliflower rice is prepared in just 5 minutes and with only 5 ingredients + spices. This creamy vegan risotto has an amazing taste, and as an added plus it is that it is healthy. Suitable for vegans and vegetarians.

Cut the cauliflower into small pieces and blend in a food processor for 4-5 seconds until it becomes fine as rice. Separate 4 cups and freeze the rest for later use.
Melt 3 tablespoons of coconut oil in a pan and fry the garlic for 1 minute. Pour the cauliflower and stir for a few minutes, then add the coconut milk and continue stirring for 2-3 minutes until it absorbs the liquid. Season with salt and pepper and garnish with roasted cashews and chives.
Serve with fried or poached egg if desired.
