This recipe for cauliflower with mushrooms is suitable for diabetics. It is prepared in a healthy way on the basis of vegetables. It is low in calories and carbohydrates. You can use vegetable broth to make the dish vegetarian. The cooking time is 40 minutes.

Required products :

  • 2 tablespoons olive oil
  • 8 cups mushrooms (shiitake, portobello, mushrooms, mushrooms), peeled and sliced
  • 1/2 teaspoon salt
  • 1 small head of cauliflower, cut into flowers
  • 1 large onion, chopped
  • 2 heads of garlic, chopped
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon ground black pepper
  • 1/4 glass of dry white wine
  • 1/2 cup vegetable broth (or meat, optional)
  • 1 tablespoon butter
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • lemon slices

* A tea cup is used to measure the quantities.

Method of preparation :

Heat 1 tablespoon olive oil in a large skillet over medium heat. Put the mushrooms and season with salt. Fry on medium heat. Stir occasionally until the mushrooms release their liquid and turn golden, then transfer them to a bowl and cover with foil or a lid.

Blend the cauliflower in a food processor until it breaks into pieces the size of rice. About 5 and a half cups are obtained.

Put 1 tablespoon of olive oil in a pan over medium heat. Fry the onion and garlic in the fat until soft, stirring often. Add the cauliflower, thyme, 1/4 teaspoon black pepper and salt. Stir for 2 minutes and add the wine, cooking until it evaporates. Pour the broth and stir for 1 minute. Put the lid on the pan and cook on medium heat. Stir occasionally until the cauliflower is soft. Then remove the lid and increase the temperature, add the butter and parmesan. Stir until melted. Add the mushrooms and black pepper.

Serve on a plate and sprinkle with fresh parsley, garnish with lemon slices.
