Required products :

  • 2 tablespoons olive oil
  • 50 grams of butter
  • 1 onion, finely chopped
  • 1 stalk of leek (white part only), chopped
  • 2 crushed garlic cloves
  • 2 bay leaves
  • 2 tablespoons finely chopped thyme
  • 400 grams of canned beans, drained
  • 1 head of celery, peeled and sliced
  • 750 milliliters of chicken broth
  • 1 apple, peeled and diced
  • 10 grams of sugar
  • 1 chorizo ​​sausage, chopped
  • 200 milliliters of cream
  • 1/4 teaspoon parsley

Method of preparation :

Heat 1 tablespoon olive oil in a saucepan, add 20 grams of butter and fry the onion and leek in the fat until soft. Add the garlic, bay leaf, thyme, beans, celery and broth. Cook under a lid for 15-20 minutes, then cool slightly.

Meanwhile, heat the remaining oil in a pan. Sprinkle the apples with the sugar, roll them on all sides, and caramelize in the pan for 2-3 minutes. Transfer to a plate.

Clean the pan with paper and fry the chorizo ​​in it until crispy (keep the fat from the pan).

Blend the soup and return it to the pan, add the cream and season to taste.

Serve the cream soup with apples, chorizo ​​and a drizzle of the fat in which the sausage is fried.
