Required products :

  • 5 1/2 tablespoons butter (80 grams)
  • 1 1/2 teaspoons flour
  • 1 cup fresh milk
  • 170 grams of Gruyere cheese or other hard cheese
  • salt and pepper to taste
  • 8 slices of bread
  • 225 grams of ham (16 slices)
  • 4 tablespoons mustard
  • 4 eggs

Method of preparation :

Turn the oven to preheat to 180 degrees.

Melt 1 1/2 tablespoons butter in a saucepan over medium heat and add the flour. Cook until it begins to change color slightly and the aroma of raw flour disappears (about a minute). Gradually add the milk and stir with a whisk to make a homogeneous mixture. Reduce the heat, stirring occasionally, until a sauce is obtained. After 3 minutes the sauce should be ready, it should be kept on a wooden spoon without running too fast. Grate 2/3 of the cheese in the sauce and stir to melt. Be careful, the heat should be enough to melt the cheese, but still no bubbles should form. Season with salt and pepper. Try to keep the sauce warm while you prepare the other components of the sandwich.

In a pan, fry each slice in the remaining oil until golden brown - for 2 minutes on each side. (If the pan dries, add more oil.)

Transfer the slices of bread to the kitchen counter. Arrange the ham on 4 of them, add the white sauce you prepared. Grate the remaining cheese on the slices. Spread Dijon mustard on the other 4 slices and close the sandwiches.

Spread a little sauce on top again and add more cheese (optional).

Transfer the sandwiches to a pan and bake until the cheese melts and gets a golden crust. Meanwhile, fry the eggs. Take the sandwiches out of the oven, place the eggs on them and serve immediately.
