Required products :

  • 50 grams of butter
  • 2 - 3 tablespoons breadcrumbs
  • 200 milliliters of fresh milk
  • 3 tablespoons wheat flour
  • a pinch of cayenne pepper
  • 1 teaspoon mustard powder
  • 50 grams of grated cheddar
  • 25 grams of grated Parmesan cheese
  • 2 eggs + 1 egg white
  • salt and ground black pepper to taste

 

Method of preparation :

Preheat oven to 190 degrees.

Melt 1 tablespoon of butter and spread on a soufflé with a capacity of 1.2 liters. Then sprinkle with breadcrumbs and remove excess that does not stick to the walls of the dish.

Heat the milk, add the remaining butter, flour, pepper and mustard. Bring the mixture to a simmer, stirring constantly until the consistency thickens.

When this happens, turn off the heat and add the cheese to the sauce, using only half of the Parmesan cheese, stir.

Cool slightly, then add the egg yolks and leave the mixture for a while.

Beat the egg whites until soft peaks form, but not for too long, as they will be difficult to mix with the sauce.

Add a few tablespoons of the beaten egg whites to the sauce, stir and then add the rest.

Stir with a large metal spoon with movements, writing eight.

Transfer the mixture to the mold, level the surface so that the souffle swells evenly.

Place the dish in the oven, sprinkle the mixture with the remaining Parmesan cheese and bake for 25 minutes. The souffle should swell and turn red.

Submit immediately.
