Required products :

  • 3 tablespoons olive oil
  • 2 onions, finely chopped
  • 2-3 pinches of salt and pepper
  • 2 cloves garlic, pressed
  • 340 milliliters of beer
  • 3 teaspoons chicken broth
  • 1/2 teaspoon flour
  • 2 teaspoons fresh milk with a fat content of 2%
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/4 tea cups grated cheese

For garnish :

  • cubes of toasted bacon
  • green onions, finely chopped

Method of preparation :

  • Heat olive oil in a large saucepan over medium heat.
  • Stew onions for 4-5 minutes, stirring occasionally.
  • Season with salt and pepper, add the garlic and cook for another 1 minute.
  • Pour in the beer and after the mixture boils, reduce the heat and simmer for 20 minutes.
  • Remove from the heat, add half the chicken broth and puree until smooth.
  • Mix the remaining broth with the flour and stir. Heat in a small saucepan and after boiling, cook for 1-2 minutes, stirring constantly.
  • Return the large saucepan to the hob and pour in the remaining broth and flour mixture.
  • Stir and when the soup boils, reduce the heat and simmer for about 10 minutes.
  • Add the milk, season with black pepper and cook for another 10 minutes until slightly thickened.
  • Remove the pan from the heat, add the grated cheese and stir until completely melted.
  • Pour the soup into bowls, garnish with toasted bacon and chopped green onions and serve.
