Fry the minced meat in hot oil until almost completely cooked, add the finely chopped onion and garlic, flour and fry, stirring.
Pour the broth into a saucepan and when it boils, pour in the minced meat with onions and garlic, potatoes (peeled and cut into cubes), add the cream and bring to a boil, stirring. Season with salt and pepper to taste.
Just before the potatoes are fully cooked, add the cream cheese and diced yellow cheese. Allow the soup to cook until the potatoes are ready. When this happens, turn off the stove and let the dish stand for 15 minutes in a saucepan with the lid closed. Then sprinkle with chopped parsley and you can now serve.
