Required products :

  • 1 kg of chestnuts
  • 1 pinch of sea salt

for syrup:

  • 500 grams of sugar
  • 1 liter of water
  • vanilla pod optional

Method of preparation :

Peel the chestnuts and put them in boiling salted water. After 20 minutes, remove from the heat and let stand for another 5 minutes in hot water.

Drain the chestnuts and carefully peel them from the thin skin.

Transfer them to a large skillet.

To make the syrup, put the sugar and vanilla pod in the water. Cook, stirring occasionally until syrup is obtained (it is not enough for the crystals to melt, it is necessary that the consistency of the syrup itself begins to resemble oil).

Pour the syrup over the chestnuts and simmer on low heat for about 30 minutes. Turn off the stove and leave for another 10 minutes on it.

When serving, you can pour some of the syrup over the chestnuts or add some brandy.

Note: If you have difficulty peeling chestnuts, you can make a small cross-section at the bottom and roast or stew for 20 minutes at 200 degrees. When you separate the hard shell, continue preparing the recipe according to the steps.
