Required products :

For the bark :

  • 12-18 graham crackers
  • 70 grams of unsalted butter, melted

For the cheesecake :

  • 120 grams of milk chocolate, chopped
  • 1/4 tea cream
  • 5 tablespoons espresso powder
  • 680 grams of cream cheese at room temperature
  • 1 teaspoon sugar
  • 1 cup sour cream at room temperature
  • 3 large eggs at room temperature
  • 1 teaspoon vanilla extract

Method of preparation :

  • Place the graham crackers in a food processor and mash them into crumbs.
  • Measure 1 1/3 teaspoons of crumbs and pour them into a medium bowl.
  • Add the melted butter, stir and transfer the mixture to a pan about 23 cm in diameter.
  • Press to the bottom and bake in a preheated oven at 180 degrees for 15-20 minutes. Allow the crust to cool completely.
  • Mix the chocolate and cream in a metal bowl and place it on steam without touching the water. Stir until the chocolate is melted.
  • Add the espresso powder, stir and remove the pan from the heat.
  • In another bowl, beat the cream cheese with a mixer on medium speed until smooth.
  • Add the sugar and beat again for about 1 minute.
  • Gradually add the sour cream and mix well.
  • Add the eggs one at a time, beating the mixture between each addition.
  • Transfer the chocolate cream and stir again until smooth.
  • Finally add the vanilla and beat on high speed for 1-2 minutes until perfectly smooth.
  • Pour the cream cheese mixture into the cooled biscuit crust and bake in a preheated 160 degree oven for 50-60 minutes.
  • Allow the cheesecake to cool completely and refrigerate for at least 4 hours.
  • Cut and serve with a smile! :)
