How To Cook Cheesecake With Apricot And Almond Liqueur - Recipe

Required products :

  • 180 grams of biscuits
  • 100 grams of melted butter
  • 70 frame sliced ​​almonds + more for decoration
  • 750 grams of fresh apricots halved (or 500 grams drained of compote)
  • 1 tablespoon sugar
  • 1 tablespoon almond liqueur
  • powdered sugar

for the stuffing:

  • 840 grams of cream cheese at room temperature
  • 170 grams of powdered sugar
  • seeds of 1 vanilla pod
  • finely grated peel of 1 orange
  • 5 broken eggs
  • 1/3 tea cup sour cream at room temperature
  • 80 milliliters of almond liqueur

Method of preparation :

Preheat oven to 210 degrees.

Grease with a 23-centimeter form and cover with baking paper. Grind the biscuits and mix them with the almonds and butter. From the resulting mixture make a tray, which should be formed on the walls of the vessel. Refrigerate to firm.

Meanwhile, roast half of the apricots, if fresh. Place them in a pan with the cut side up and bake for 25 minutes. Cool them and reduce the oven temperature to 170 degrees.

For the filling with a mixer, beat the cream cheese, sugar, vanilla and orange people. Add the eggs one at a time to combine, then pour in the aromatic liqueur.

Arrange the roasted apricots on the biscuit tray (with the cut side up) and carefully pour the cream over them.

Bake for 1 hour until the edges of the cake are slightly browned and the cream is firm. Cool completely.

Before serving, bake the remaining apricots at 210 degrees (whether canned or fresh) until caramelized - for about 25 minutes. Cool them.

Arrange them on the cake, sprinkle with powdered sugar and sliced ​​almonds and serve.
