Necessary products

About the base:

  • 200 g low-calorie biscuits
  • 75 g of melted butter
  • 1 piece of finely chopped ginger
  • For the stuffing:
  • 1.5 kg of cottage cheese
  • 1 tbsp sweetener
  • 3 eggs
  • 3 tablespoons raspberry yogurt
  • grated rind of 2 lemons
  • juice of 1 lemon
  • 50 - 60 g of flour
  • 200 g of raspberries

Method of preparation:

Preheat oven to 180 degrees. Crush the biscuits, mix them with the melted butter and ginger. Spread the resulting mixture on the bottom of a tray with a diameter of 23 cm and press.

Make the filling. Pour the curd into a large bowl, add the sweetener, then the yogurt and eggs one by one. Finally, add the lemon zest, juice and flour. Put half of the raspberries. Spread the resulting mixture on the biscuit base and level the surface. Bake for 10 minutes, then reduce the temperature to 110 degrees and leave the dessert in the oven for another 25 minutes.

Turn off the oven, open it slightly and let the cheesecake stay inside until it cools completely (about 1 hour).

Remove, sprinkle with remaining raspberries and serve.
