Necessary products
For the dough:
150 ml of fresh milk
50 g unsalted butter
3 tablespoons sugar
3/4 tsp Sol
50 ml of warm water
1.5 tsp dry yeast
2 egg yolks
2.5 tsp flour
For the stuffing:
50 g of cottage cheese
125 g cream cheese
2 tablespoons sugar
1 egg yolk
1/2 tsp grated lemon peel
For sprinkling:
2 s. l. flour
1.5 tablespoons sugar
1.5 tablespoons softened butter
Method of preparation:
Heat the milk with 2 tablespoons of sugar, 45 g of butter, salt until the butter melts and the sugar dissolves. Cool to a "warm" state. In a bowl, mix the remaining sugar with the water, add the yeast and leave for 10 minutes. Then to this mixture add the milk and egg yolks, 2 cups of flour and knead the dough (a sticky mass is obtained). Sprinkle the hob with flour and start kneading, gradually adding the rest of the flour. Knead for about 10 minutes until you get a smooth elastic mass. Cover with foil and place in a warm place for 1.5 hours until the dough doubles in volume. Divide the dough into 12 parts, form balls out of them and arrange them in a tray 2.5 cm apart. Melt the remaining oil and spread it on the balls. Cover with a towel and leave for about an hour.
Prepare the filling. Mix the cottage cheese, cream cheese, sugar, lemon zest and egg yolk and mix until smooth. Separately mix the sugar and flour for sprinkling, add the butter and rub with your hands until you get "crumbs". Make an indentation with your finger in the trail of each ball and put 1 teaspoon of the filling in it and sprinkle with the "crumbs".
Bake in a preheated 180 degree oven until golden (about 35 minutes). Then wait for the cakes to cool in the form and serve.
