Required products :

  • 5 slices of bacon
  • 1 onion
  • 2 teaspoons spinach
  • 5 chicken breasts
  • 2 tablespoons salt
  • 1 teaspoon black pepper
  • 10 thin slices of ham
  • 12 slices of Emmental cheese
  • 3 teaspoons flour
  • 8 large eggs
  • 3 teaspoons breadcrumbs
  • parsley

for the sauce:

  • 3 tablespoons butter
  • 2 cloves garlic - pressed
  • 3 tablespoons flour
  • 2 teaspoons fresh milk
  • 1/4 teaspoon Dijon bitter
  • 1 cup grated Parmesan cheese
  • salt and pepper to taste

Method of preparation :

Finely chop the bacon and fry for about 3-4 minutes. Add the onion and fry until caramelized - about 10 minutes. Put the spinach and let it simmer for 3 minutes until soft. Remove from the heat.

Put the chicken breasts between two layers of stretch film and beat them until they become thin. Repeat with the remaining meat.

 

Arrange them on a large sheet of plastic wrap, in a row, overlapping their edges. Season with salt and pepper.

Arrange the ham, cheese on top of the meat and put the bacon and spinach filling on top.

Roll up a tight roll with the help of the foil and put it in the refrigerator for 1 hour.

Then distribute the beaten eggs, breadcrumbs and flour in 3 trays of suitable size to bread in them.

Roll the roll in flour, then dip in eggs, breadcrumbs, again in eggs and again in breadcrumbs.

Bake at 190 degrees for 40 minutes until the roll is browned.

Meanwhile, make the sauce: Melt the butter in a saucepan over medium heat and fry the garlic until it releases its aroma. Add the flour and fry until browned. Add the milk, stirring constantly. Add the Dijon mustard, season with salt and pepper.

Finally add the grated Parmesan cheese, stirring constantly when the cheese has melted, remove from the heat.

 

Serve the roll with sauce and parsley.
