Required products :

600 - 700 grams of skinless chicken breast (can legs)

150 grams + 1 tablespoon cornstarch

1 teaspoon chicken broth

1 egg

50 milliliters of soy sauce

25 milliliters of sherry wine

a small piece of ginger

2 - 3 cloves of garlic

hot pepper to taste or hot pepper

4 tablespoons sugar

a few green onion feathers

corn oil for frying

Method of preparation :

Cut garlic cloves into slices, ginger into small cubes.

Onion feathers - in strips about 3 centimeters long.

Cut the fillet into bite-sized pieces.

Pour some cold water into a bowl and add a few ice cubes.

In a deep bowl pour 150 grams of starch, beat the egg.

Start stirring by pouring a tablespoon of ice water. Judge the amount of water according to the consistency (it should be thick), but approximately, about 3 tablespoons are enough to dissolve the starch.

Pour the meat into the mixture, stir so that each bite is well covered.

Heat the corn oil well in a suitable pan, the amount should be enough so that the chicken pieces are completely covered with fat.

Fry them for about 4 minutes in small portions so that they can float freely in the oil.

Remove the finished on paper to drain excess fat.

Pour the amount of it left in the pan, leaving about 1 tbsp. In it, fry the chopped garlic and ginger.

If you like spicy, add hot pepper (in this case whole dried to flavor the oil).

Fry for about 40 seconds, then pour the broth.

When it boils, add the wine, soy sauce, black pepper and 4 tablespoons of sugar.

Stir vigorously and let the mixture remain on the hob until about 1/3 of it has evaporated.

Dissolve 1 tablespoon of starch in 2-3 tablespoons of cold water. No lumps should remain.

Add it to the sauce, mix well and do not stop until the mixture thickens.

Pour the chicken pieces into the aromatic liquid, stir, distribute the dish on a plate, sprinkle with chopped green onions and serve warm.

Enjoy your meal!
