Cut the fillet into portions, season each with salt, pepper and cumin to taste. Melt the butter in a pan, heat it and saute the meat. Stew it on low heat for 20 minutes, drain and set aside.
Put the curry, mustard, lemon juice and starch in the same fat. Stir until a homogeneous mixture is obtained. If it thickens more, dilute with a little water. Return the chicken to the sauce, stir and simmer for another 5 minutes. Sprinkle portions, garnish each with chopped fresh parsley and serve with a garnish of your choice.
