Method of preparation :
Make an incision along the length of the chicken to form a pocket (be careful not to cut the meat to the end).
Distribute the cream cheese in the resulting pocket and close. Put 1 sprig of thyme on each fillet and wrap with the slices of ham.
Place the meat in a small pan.
Combine parsley, parmesan and lemon zest, and season with salt and pepper. Sprinkle the resulting mixture on the meat and pour olive oil.
Bake for 10 minutes at 190 degrees.
Sprinkle the cherry tomatoes around the meat and return to the oven for another 10 minutes until the meat is browned and the tomatoes are cracked.
Finally, put the spinach in the bowl and return to the oven for a few minutes until the petals melt.
Serve 2 servings.
