Cut the chicken breasts in two. Divide each into large and small fillets. Save the small one for another dish, and the big one (4 pieces will be obtained) knock with the blunt side of the knife blade. Then make deep incisions along the sides of the fillets to form "pockets".
Rub the chicken with salt inside and out, put a piece of yellow cheese in each pocket and close the stuffing with the meat.
Roll the fillets in the flour in which you have put a little salt. Dip in beaten egg and finally in breadcrumbs.
Put in a pan with a small amount of hot oil, fry on both sides until crusty, then reduce the heat and fry until done.
Serve with fresh vegetable salad.
