How To Cook Chicken Breast With Zucchini And Red Beans - Recipe

Required products :

  • 580 grams of chicken breast cut into chunks
  • 2 tablespoons olive oil
  • 2 tablespoons barbecue spice
  • 100 grams of chopped onions
  • 2 cloves garlic, mashed
  • 250 grams of frozen peppers (maybe fresh)
  • 3 zucchini, cut into slices
  • 400 grams of red canned beans, drained
  • 200 grams of sweet corn
  • the juice of 1 lemon + more slices to serve as desired
  • 2 tablespoons coriander
  • sour cream and boiled rice if desired for serving

Method of preparation :

Pour 1 tablespoon of olive oil over the chicken and season the spice with barbecue. Fry in a large pan (do not put the meat all at once, but fry it in portions) for 6-8 minutes until golden. Take it out on a plate and set it aside.

Pour the remaining olive oil into the pan and fry the onion in it for 10 minutes until soft. Add the garlic, peppers and zucchini, fry for another 10 minutes to soften the vegetables.

Return the meat to the pan and add the beans and corn. Leave for a few minutes on the stove to heat all the products.

Finally add the lemon juice and coriander, serve with lemon slices, cream and rice if desired.
