An authentic Louisiana recipe for chicken and vegetable stew kajun, flavored with homemade fragrant Creole spice and ham.

Required products :

  • 4 tablespoons olive oil
  • 5 chicken breasts, cut into small pieces
  • 1 diced onion
  • 2 stalks of celery, thinly sliced
  • 3 bay leaves
  • 5 tablespoons flour
  • 4 teaspoons Creole spice
  • 600 milliliters of chicken broth (from 2 cubes)
  • 2 green peppers, seedless and thinly sliced
  • 300 grams of diced ham
  • 3 green onion stalks, chopped
  • 2 tablespoons parsley, chopped

Method of preparation :

Heat 1 tablespoon olive oil and fry the chicken until browned, then transfer to a plate. In the same pan, fry the onion in 1 tablespoon of hot olive oil until soft. Add the celery and fry for another 2 minutes, then transfer the vegetables to a plate with the chicken.

Heat the remaining olive oil, bay leaves and flour in the pan and cook, stirring constantly, until golden brown. Pour a little water if necessary. Season with Creole spice and stir for 2 minutes. Gradually pour in the chicken broth and stir until a smooth sauce is obtained.

Return the chicken and vegetables to the pan, along with the peppers, cover with a lid and simmer for 15 minutes. Add the ham, stir, cover again and simmer for another 10 minutes. Taste and season if necessary.

Serve the chicken stew cajun in a plate, sprinkle with green onions and parsley and serve.

Tips : If you do not have a Creole seasoning or do not have time to cook, season with 1 teaspoon paprika, ground cumin, chili powder and dried basil. This recipe is very tasty because it combines several aromatic spices that give an even more pleasant taste to the dish. Vitamins and minerals of vegetables and chicken proteins make the stew complete for lunch or dinner. Dip a toasted wholemeal bread in the sauce and enjoy your lunch.
