Line a square baking tray with parchment paper. In a bowl, mix the cream cheese, shredded chicken, buffalo sauce and both types of cheese. Season to taste. Transfer the mixture to the prepared pan and level the mixture with a spatula. Freeze for 1 hour.
Cut the mixture into 16 sticks, trying to work quickly.
Roll each bite in the flour, then in the beaten eggs, finally the breadcrumbs and repeat again - in the egg and breadcrumbs. Arrange on a tray until you are done with all the bites.
Fry them for about 30 seconds in very hot oil until browned.
Serve with your favorite sauce.
