How To Cook Chicken Cordon Bleu With Milk Sauce - Recipe

Required products :

  • 2 halves of chicken breast / about 300 grams each /
  • 4 slices of yellow cheese / or Swiss cheese /
  • 4-6 slices of ham
  • 3 tablespoons mayonnaise
  • 1 1/2 tablespoons mustard
  • 1/2 teaspoon salt
  • freshly ground black pepper to taste
  • 1/2 cup breadcrumbs
  • lubricating oil

For the milk sauce :

  • 1 1/2 tablespoons butter
  • 1 1/2 tablespoons flour
  • 1 1/4 tea cups fresh milk
  • 2 tablespoons Dijon mustard
  • 3 tablespoons shredded cheese
  • 1 teaspoon thyme leaves / optional /
  • salt and pepper to taste

Method of preparation :

  • Cut the chicken breasts lengthwise to form a pocket.
  • Distribute the yellow cheese and ham in each pocket and transfer the chicken breasts to an oiled pan.
  • In a small bowl, mix the mayonnaise, mustard, salt and pepper. Stir well.
  • Spread the chicken with the mixture and sprinkle with breadcrumbs. Press lightly with your hands to make them fit well.
  • Bake in a preheated 180-degree oven for about 25-30 minutes until golden brown.
  • Meanwhile, prepare the milk sauce by melting the butter in a small saucepan over medium heat.
  • Fry the flour for about 1-2 minutes, stirring constantly.
  • Add half the milk and stir until a homogeneous mixture is obtained.
  • Add the remaining milk, mustard and grated cheese.
  • Cook for about 3-4 minutes until the sauce thickens, keeping in mind that it will thicken even more when it cools.
  • Remove the pan from the heat, season with salt and pepper to taste and add the thyme leaves. Stir.
  • Serve the stuffed chicken breasts, garnished with milk sauce and lettuce.
