Cut the breast into small pieces, put in a pan (preheat it) and fry for 7-10 minutes. Then take them out on a plate.
In the same bowl, pour a little olive oil and stew the chopped onion in it until it becomes soft and transparent.
Then add the chopped zucchini, basil, salt and pour the broth. Once the soup boils, cook it for 15 minutes (the vegetables should soften). Be sure to stir the soup.
Separate two ladles from it and puree the rest. Then combine the liquid soup with the puree, add the chicken pieces and bring to a boil again.
Serve with crackers or toast and grated yellow cheese or other suitable cheese.
